This time I was looking for something light, healthy and of course easy to make. When I searched for some ingredients that could work together, the coconut milk instantly came to mind. And now that it's also egg-frre, vegans can enjoy this dessert too!
Ingredients: (serves 4-5)
1 canned coconut milk
3 tbsp cornstarch
1 tbsp vanilla
6 tbsp cocoa powder
2 tbsp oil
3 tbsp agave nectar
7 tbsp water
Before you start you need to put the coconut milk in the fridge overnight. If you forget to do it, like I mostly do then don't worry. You can also put it in the freezer for let's say about 20 minutes. This step is important, because the cold will separate the liquid from the coconut cream and we only need the cream. So whip up the coconut cream with a mixer together with the cornstarch and vanilla.
Then prepare your 'chocolate'. Stir the cocoa powder, oil, agave nectar and water. Then mix both mixtures together and put them in the fridge overnight.
The last thing you have to do is to decorate it with slices of banana, because I think that the banana fits perfectly to this mousse.
And then you are ready to enjoy!
