Healthy Blueberry Cupcakes

Now that it's summer and you can buy berries everywhere,
I made some blueberry cupcakes. And also because
it's summer, I thought it might be helpful to make them more healthy than the usual cupcakes. So no butter frosting or whipped cream! I used curd cheese and that made the cupcakes even more refreshing and perfect for a hot summer day.


Also children love them, because my little sister tried one and gave me  permission to post the recipe on this blog 🙂

Ingredients: (for 9 cupcakes)

300g chickpeas

4 tbsp whole grain flour

2 tsp baking powder

5 tbsp oil

100ml milk

pinch of vanilla

50g brown sugar

2 hands of blueberries


For the frosting:

150g curd cheese

50g cream cheese

2 hands of blueberries

pinch of vanilla

2 tbsp agave nectar


Take a food processor and put the chickpeas, flour and baking powder in it. Then process everything until it's smooth. Put it in a bowl and add oil, milk, vanilla and sugar and mix everything with a mixer. Then add the blueberries.

I baked the muffins in silicone muffin cups, but you can use whatever you want. Bake them for 15 to 20 minutes at 180 °C.


For the frosting mix together the curd cheese, cream cheese, vanilla, agave nectar and chopped berries. Put it into the fridge until the muffins are cool.


The last step is to add the frosting on top of the muffins (I used a pastry bag) and decorate it with fresh blueberries.


I hope you enjoy these blueberry cupcakes as much as my family and I did (I had to eat three at a time before my family ate all the cupcakes at once!).
